Tomato and Basil Bruschetta

In order to fully embrace La Dolce Vita and throw ourselves into the Italian lifestyle, we rented an apartment whilst in Rome. It gives you so much more freedom and it's nice to have a little base you can call home whilst away. Plus, we enjoyed pretending we actually lived there and swanning around like locals!

To christen our new pad, we hit the supermarket on our first night and got down and dirty in the kitchen.

We rustled up some veggie spaghetti and one of my favourite, and easiest, dishes, Bruschetta.

You can use any toppings you fancy and it is a great way of using up whatever combination you have in your fridge.
We went with the classics:
Tomatoes
Onion
Basil
Olive Oil
Salt
Pepper
Toasted/grilled baguette
(I would normally include garlic as well, *lots and lots of garlic... yum!*)

With some coffee whilst cooking to perk us up after our day of travelling from Florence!

Chop your onion and tomatoes into tiny pieces.

You can boil your tomatoes in order to remove their skins, however, we went for the rustic lazy version and skipped this part...

Mix all of your ingredients together with the olive oil, salt and pepper to season.

Drizzle your toasted bread with oil.

And top with this yummy mix...

And serve alongside your industrial sized pot of spaghetti. Simples! With plenty of prosecco to wash it down of course.

*Caution* Watch out for saucy Italian aubergines flashing their naughty parts at you though...
